Papaya is a large, oval fruit with smooth, thin skin that ripens from green to golden-orange/yellow. The flesh is soft, juicy, and salmon-colored, with a mild, musky sweetness and a cluster of black seeds in the center. Ripe papaya is sweet and creamy, while green (unripe) papaya is firm and mildly bitter - perfect for cooking.
